Home-Style Lasagna

I have been wanting lasagna for a while now. When I found a package of italian sausage on sale, I figured it was time to give into the craving.

I make my lasagna a little different, which is why I call it a home-style lasagna. It’s super simple and easy for any home cook. And its a great base recipe, if you wanted to jazz it up as well. I am going to give you the simple version though.

One think you will notice different, is that I use cottage cheese. My house is not a fan of ricotta cheese, so we always use a sub. Honestly I like it better with the cottage cheese, you could use ricotta if you like more of the traditional version.

I use a mixture of ground beef, and italian sausage. You could do all ground beef, or even sub the italian sausage for a breakfast sausage. If you wanted to sneak some greens into your kids diet, you could add chopped spinach to the sauce mixture, or even chopped mushrooms. They would never know it’s there.

Tell me what your favorite kind of lasagna is and if you have done any fun variations! Did I mention I made coffee cake topped banana nut muffins for dessert. You wouldn’t believe it goes great with a bottle of red wine.

Home-Style Lasagna

  • 2 pounds ground beef
  • 1 pound Italian sausage, casing removed
  • 1/2 onion, diced
  • 3 cloves of garlic, minced
  • 24 oz jar of marinara
  • 6 oz can tomato paste
  • 1/2 cup water
  • 1 teaspoon dried basil
  • salt & pepper
  • pinch of crushed red pepper
  • olive oil, and salt for pasta water
  • 10 oz package lasagna noodles
  • 1 lb cottage cheese
  • 1 cup grated parmesan cheese
  • 2 eggs, beaten
  • 1 teaspoon dried basil
  • 1 teaspoon garlic salt with parsley
  • 4 cups shredded mozzarella cheese

In a large skillet on medium high heat brown ground beef, italian sausage, onion, and garlic season with salt, pepper and a pinch of crushed red pepper. Drain grease and return meat to skillet.

Add tomato paste, and mix in completely with beef. Add marinara sauce, 1/2 cup of water, and 1 teaspoon of dried basil. Cook sauce on medium to low heat for about 20 to 30 minutes, while you prepare the rest of the ingredients.

Bring a pot of water to boil, add salt and olive oil so noodles do not stick together. Cook according to package directions, until al dente. Noodles will finish cooking in the oven.

In a small bowl mix together grated parmesan cheese, cottage cheese, eggs, 1 more teaspoon of dried basil, and 1 teaspoon of salt mixture.

Assembly: grease a large rectangular baking dish. Layer 4 noodles on bottom, top with half of cottage cheese and egg mixture, a little less than half of the meat mixture, and lastly 2 cups of mozzarella cheese. Repeat with noodles, cottage cheese/egg, meat, and finished with mozzarella. Bake at 350 for 30 to 35 minutes. Until cheese is golden and bubbly.
