Mango de Gallo

I put pico de gallo on everything!! I had bought some mangos for my little girl and as I was making her one, I soon realized she wasn’t going to eat the entire thing. I was making tacos for lunch and had already planned on making some pico de gallo, so why not add mangos to it!!

This recipe is super simple, just mangos, cilantro, red bell pepper, jalapenos, roma tomatoes, lime juice, and a little salt. I would have added some red onion if I had one, but after tasting it was great even without it. I deseeded and deveined my jalapenos, but next time I think I will leave the seeds in.

You of course could leave the mangos out all together and just have regular pico de gallo, both are very delicious. Even sub the mangos for strawberries, or add chopped avocados.

This would go great on top of chicken tacos, fish tacos, as a dip along side some guacamole, or on top of a taco salad. I love all of the colors, someone once told me you should fill your plate with the color of the rainbow.

Mango de Gallo

Ingredients:

  • 1 mango, diced into small squares
  • 1 red bell pepper, diced
  • 1 large jalapeno, diced
  • 2 roma tomatoes, diced
  • 3 tablespoons chopped cilantro
  • juice of 1 lime
  • salt to taste

Mix all ingredients together in a bowl, season with salt to your liking.
