Chicken Dijon

This is a chicken dish over grilled onions, topped with a honey dijon mustard, cheese, green onions, and tomatoes. Pure bliss.

There used to be this restaurant where I live that had this dish on their menu. I loved it. They closed down, and I was heart broken. They still have a bar opened here that serves their steaks and oh my they are so good. But their actual restaurant is over an hour away, and with a baby I just never get the chance to go. I had to learn to make this chicken Dijon myself. I was lucky my friend Ryan used to work there! I immediately started blowing up his phone with text messages asking if he had the recipe, and he did!! I was so happy. Many many texts later, we finally came up with a recipe.

Now the restaurant uses a honey mustard, we both decided it would be better to make our own. You could use a store bought honey mustard, but just sample a few first. You do not want an overly sweet honey mustard.

This recipe is delicious and the perfect balance of flavors. I hope you give it a try!

Chicken Dijon


  • 4 4oz chicken breasts
  • Salt, pepper, garlic, and onion powder
  • 2 tablespoons olive oil
  • 1 yellow onion, sliced
  • 3 tablespoons butter
  • 1/4 cup dijon mustard
  • 2 tablespoons honey
  • Squeeze of half lemon
  • Salt and pepper
  • Cheddar cheese
  • Green onion, diced
  • 1 tomato, diced

First start by seasoning chicken breasts on both sides with salt, pepper, garlic, and onion powder. Heat the olive oil in a large oven proof skillet, on medium heat. Cook chicken breasts on both sides until cooked all the way through. Remove from skillet and set aside

Add the butter, and sliced onions to skillet and cook on medium low until they are translucent and starting to carmelize, stir frequently. Should take about 8 to 10 minutes.

In a small bowl mix together the dijon mustard, honey, squeeze of lemon, and a dash of salt and pepper.

Place chicken on top of bed of onions, and brush top of chicken with honey dijon sauce.

Top each piece with shredded cheddar cheese, green onion, and diced tomatoes.

Broil for 2 to 3 minutes until cheese is melted and bubbly.

Serve with rice and vegetable of your choice.
