Chocolate Cupcakes

Valentine’s Day is fast approaching and I wanted try out a chocolate recipe you could make. This would be perfect to make for your hunny, to take to work, or send with your kids as treats.

Chocolate, one of my favorite foods. I’m not sure if I can ever get enough chocolate. Dark chocolate is especially my favorite. Just recently someone gave me a box of dark chocolates, and I swear I almost ate the entire thing in one evening..oops…. I’m telling you, it’s very dangerous for me to have chocolate around. I have chocolate ice cream in my freezer right now, you know those single serving size blue bell cups. It’s taking everything in me to not get up and go eat one. Ok back to the recipe, I must distract myself.

I make a lot of cakes and desserts from scratch. There is just something about boxed cake mix though. I love experimenting with them, and they are just so easy to make.

One thing I’ve learned about chocolate cake is that coffee always makes it better. You can’t even taste the coffee in this recipe, it just makes the chocolate flavor stand out even more. So please do not sub water or milk for the coffee, just give it a try. I promise you will not regret it.

I topped these with a cream cheese frosting, but feel free to use a butteecream if that’s more of your thing. Cream cheese frosting just happens to be my favorite. I also wanted to add something extra so I topped the frosting with toffee bits. I think it just set these over the top.

This recipe makes around 30 cupcakes, so just be sure to share. If you decide to eat them all by yourself, your secret is safe with me.

Chocolate Cupcakes

Serving: 30 cupcakes


  • 1 box devils food cake
  • 3/4 cup flour
  • 1/4 cup cocoa powder
  • 1 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup coffee, cooled
  • 1/3 cup buttermilk
  • 2 tablespoons canola oil
  • 3 eggs
  • 1 cup sour cream

Preheat oven to 350.

In a large bowl mix together cake mix, flour, cocoa powder, sugar, and salt. Set aside.

In a separate bowl, mix together rest of the ingredients. Add to dry mixture, beating for 2 minutes.

Line cupcake pans with liners. Fill cupcake liners 2/3 full. I use an ice cream scoop.

Bake at 350 for 21 minutes.

Cream Cheese Frosting


  • 1 package cream cheese
  • 1 stick of butter
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Toffee bits and chopped bittersweet chocolate, for topping

Whip all ingredients together with mixer until light and fluffy. Frost cupcakes and top with toffee bits and chopped bittersweet chocolate.
