It’s Sunday again and we only have a few weeks left of Football!! As I was watching the game I got very hungry. Instead of reaching for the chips and cake that’s in my kitchen I decided to make something that was quick.
I needed a recipe I could throw together in minutes during half time of the football game. I preheated my oven to 400, grabbed a sheet pan, proteins, and all the color vegetables I could find. And 40 minutes later dinner was ready!!!!!
You could really use any proteins you wanted, same with the vegetables. I just grabbed the ones in my fridge that were colorful and were on the verge of going bad. As I’ve said before I hate letting fruits and veggies go to waste.
I sprayed a sheet pan with cooking spray and then lined with parchment paper. Makes for a much easier clean up. Try out this recipe and let me know what you think in the comments below!
Chicken and Sausage Sheet Pan Dinner
- 1 lb chicken breast, cut into strips
- Smoked sausage, sliced
- Fresh green beans
- Mini potatoes, diced in half
- Mini sweet peppers, seeded and sliced in half
- 1/2 onion, sliced
- Parmesan cheese, garnish
- 1/2 cup olive oil
- 1 tablespoon soy sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Preheat oven to 400 degrees. Spray sheet pan with cooking spray and line with parchment paper.
In a small bowl mix olive oil, soy sauce, Worcestershire sauce, paprika, garlic and onion powder.
Spread veggies, chicken, and sausage on sheet pan. Pour marinade all over and toss to coat. Season with salt and pepper to taste.
Bake at 400 for 30 minutes.
Remove pan from oven and turn chicken and sausage over. Turn oven to broil. Sprinkle parmesan cheese over pan. Bake for 2 to 3 more minutes.
