Hello all! It has been forever since I have posted! I have not stopped cooking, but I had a baby!!!! She is the cutest little thing ever, although my opinion may be biased. In light of having the little one, I decided I should kick off a new blog post with a lactation cookie recipe! I had been wanting to make one for the longest time, but just haven’t found the time. I woke up this morning and was craving cookies so I figured why not now! Lets get this party started!!
First off lactation cookies have brewers yeast, oatmeal, and ground flax seed. Which is all said to help with your breast milk production. I added the chocolate chips and walnuts for extra taste. Now let me say to absolutely NOT TRY THE BREWERS YEAST BY ITSELF. I repeat…DO NOT TRY THE BREWERS YEAST ALONE! I mean if you really want to you can, but it tastes disgusting……seriously….if anyone likes the taste of it by itself and unaltered leave me a comment so I can know you!
Anyway….haha…here are the ingredients I used. I also used a gluten free flour because well that’s what I had in my pantry. You can use regular oats as well if that’s what you have. I just happen to like the texture of steal cut oats a little more.
When I creamed the butter with the sugars, I added a few tablespoons of almond butter. I love it and think it makes everything taste better. You can try peanut butter, I’m sure that would taste great too.
When it came time to add the oats, chocolate chips, and walnuts it was quite a workout. The batter may feel thick, but the cookies come out perfect.
I baked them at 375 for about 12 minutes. They were soft in the middle and everything complimented each other perfectly. I heard people were having trouble with their cookies spreading out to the size of pancakes but these did not.
So to all my breast feeding mamas out there, try these cookies and let me know what you think! And to everyone that isn’t breast feeding, try these cookies out anyway. They are a great way to get a few extra healthier ingredients in your kids.
You won’t regret it.
