Green Chili Chicken Lettuce Tacos
I needed something to make that didn’t involve a lot of effort. Every time I think easy, when it comes to food, I think of my good and faithful slow cooker!! Insert green chili chicken!
Only with a few simple ingredients, you will love this recipe. Here is the cast of characters.
Chicken breast, green chili sauce, onion and bell pepper, chicken broth, and spices.
First you start by seasoning the chicken breasts on all sides, then placing in slow cooker. You can also sear the chicken breasts on both sides in a hot, hot skillet just for an added step of flavor.
Slice onion and pepper, placing on top of chicken.
Then you will cover it in the entire jar of green sauce, and about 1/2 cup of chicken broth.
Now I find this particular brand at our local HEB. If you do not have an HEB around you (I’m sorry..) then just use any kind of green chili jar salsa.
Stir everything around to mix together.
Cook on low and slow for about 4 to 6 hours, shredding the chicken at the end.
You can use the shredded chicken for so many things. In this instance I used it for lettuce tacos, and as a filling in enchiladas. Both came out fantastic.It would be a great add in to soup or regular tacos as well.
I used the enchiladas I made to go with a steak for my boyfriend one night. Needless to say he loved it.
Remember that cute little couple I mentioned in my last post. Well they came down to Cactus Creek Ranch for their honeymoon and I sent down a pan of enchiladas for them to enjoy out by the campfire! They loved it!!

Green Chili Chicken (Slow Cooker)
- 3 boneless skinless chicken breasts (or 4 thighs)
- 1 jar that green sauce (or green chili salsa)
- 1 red bell pepper, sliced
- 1 onion, sliced
- 1/2 cup chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
Season chicken breasts, both sides. Place in slow cooker.
Slice peppers and onions and place over chicken.
Add jar of green sauce and 1/2 cup chicken broth. Stir all together
Cook on low 4 to 6 hours in the slow cooker. Shred chicken when finished.
Use on lettuce or regular tacos. Top with pico de gallo, guacamole, hot sauce, sour cream, cheese, refried beans, pretty much anything you like on tacos.
You can also use the chicken for a tortilla soup, filling in enchiladas, pulled chicken sandwiches or over a salad. Yummmyyy!!
