How this cupcake combination came about I am not sure. Probably because of my love for cupcakes and pumpkin pie. I was extremely pleased with how well this recipe turned out! I wanted to make some of the ingredients as close to a pumpkin pie as I could, but also make it really easy for just anyone to make. That is where the spice cake mix came in. The list of ingredients is super simple!! If you do not have spice cake mix you can always use a yellow cake mix and add pumpkin pie spice seasoning.
I started out by mixing all of the cake ingredients together and dividing them between 24 cupcake liners.
I used cute fall cupcake liners I found at my local grocery store (shoutout to HEB), I wish you could have all witnessed my excitement when I found them.
Fun part about this recipe I really wanted to try was baking them in a toaster/conventional oven. I was a little skeptical at first, but they turned out perfect! My toaster oven has dials that go to 350 and allow a bake setting. I’m not sure if they all do. Either way the recipe works perfect in the oven. Just watch the baking time around 17 minutes and see how long until a toothpick comes out clean when stuck in the middle of the cupcake. It will take anywhere between 17-20 minutes in a regular oven. It took me 22 minutes in my toaster oven. I also had to do them in 4 batches of 6. That may not be ideal for everyone. Definitely something you could try if you wanted to only make 6 and refrigerate half of the batter until later.
Once all of the cupcakes were baked and cooled, I frosted them with a cinnamon cream cheese frosting. Absolutely divine! Seriously I finished these at about midnight last night after a flew glasses of wine with a girlfriend of mine and lets just say I could have eaten the entire bowl of icing. I was going to originally melt down caramel squares with a little of heavy cream to drizzle over the cupcakes. After I tried the cream cheese frosting with cinnamon (and after all of the wine) I just felt like it was not necessary to have the caramel. If you decide to add it, I’m sure it would be fantastic.
The above picture is the list of ingredients I used for the frosting. This is something I am trying new with my blog, I would love to show as many steps as I possibly can with my posts. You will see the sprinkles in the picture, they are optional. If you are traditional, like my father, you would then probably prefer to opt out the sprinkles. Maybe add some toasted pecans instead! The possibilities are endless.
The icing is super simple to make. Just add all of the ingredients and mix together with an electric mixer really well. You want it to be super creamy and fluffy. Someone once told me to mix them together for about 8 minutes or so. It takes the raw taste of the sugar out. I am not sure if this is true or not, but it definitely makes it the perfect consistency I am looking for. Just be sure to not overmix any frosting, you do not want it to look curdled

Pumpkin Cupcakes with Cinnamon Cream Cheese Frosting
- 1 package spice cake mix
- 1 can pure pumpkin 15 0z
- 3 large eggs
- 1/3 cup vegetable oil
- 1/3 cup evaporated milk
- 3 tablespoons sour cream
- 1/2 tablespoon cinnamon
- 1 teaspoon vanilla extract
- pinch of salt
- 2 tablespoons of sugar
Mix together all of the above ingredients with electric mixer until combined.
Fill 24 cupcake liners 3/4 full with batter. Bake at 350 degrees for 17-20 minutes. Until toothpick comes out clean.
Cinnamon Cream Cheese Frosting
- 1 stick of butter
- 8 oz of cream cheese
- 3 cups of powdered sugar
- 1 teaspoon of vanilla
- 2 teaspoons of cinnamon
Mix together all ingredients with electric mixer for 5 to 10 minutes until fluffy. Frost cupcakes with frosting and sprinkle with desired sprinkles or chopped pecans.
